Avec restaurant in Chicago serves one of my favorite appetizers -- chorizo-stuffed medjool dates wrapped in bacon and served in a spicy tomato sauce. I'd like to try and duplicate this at home. Does anyone have an opinion as to whether I need to cook the chorizo before stuffing it in the dates? Or do you think that the 10-15 minutes in the oven will be sufficient to cook the chorizo?
And if anyone actually knows what they put in the tomato sauce, please share! It's a pretty simple sauce, so I'm guessing its just some quality tomatoes cooked down with some chiles or red pepper flakes, maybe with some garlic or onion.
