Chocolate mousse nightmare

I've tried to make a chocolate mousse recipe that has worked on problem before.

However, the last few times I've been having the same problem. When I add the egg yolk to the melted chocolate (which has been melted in a baine marie) the chocolate goes 'bobbly' and there's an oily mess at the bottom of the bowl.

I'm not sure if the chocolate is too hot and is cooking the yolk - but most recipes recommend you add the yolk to the warm chocolate, so I don't think that is it.
