Making a sculpted cake for my son's b-day. He wants chocolate cake. I made one for my oter son with Shirley Corriher's deep dark chocolate cake, which was nicely moist, but I am afraid it is too delicate for the cake my son wants. It is similar to the black magic cake - maybe folks ave had success sculpting with that one? I HATE dry cake and prefer good chocolate flavor. The Magnolia bakery cupcake recipe for instance was a flop for being dry. I will be converting to gluten free, which can make a drier and more fragile cake, FYI.
