I grew up in NYC, and we used to go to this wonderful Chinese restaurant in Chinatown that had a dish consisting of thin pan-fried rice noodles with pork medallions. The noodles were in loose cakes that were somewhat crispy on the outside and soft on the inside. Everytime I visit Chinatown in Manhattan I try to duplicate this dish, but the noodles are never the right combination of crispiness and softness. I am visiting NYC again in a few days. Does anyone have any suggestions for a restaurant in Manhattan, preferably in Chinatown, that has such a dish?
