Okay. I'm interested in learning a little more about Chinese food.
But the economy has hit me pretty hard. I'm not in a position to buy five or six cookbooks and figure out which one works. I need to maximize the impact of my purchase.
When I was exploring Italian food, I found that one of Marcella Hazan's books did the trick more than adequately.
So...is there a Chinese cookbook analogous to this? Is there a fairly literate cookbook, written by a real chef, with recipes that work the first time you use them?
