I had the pleasure of dining at Happy Cafe in San Mateo where I had an eminently simple and satisfying dish of cold boiled chicken, served with rice and chopped pickled green vegetable on the side. I wonder if this is a common Chinese dish, or something Happy Cafe whipped up as an inexpensive lunch special? The parts of the chicken served had luscious slippery mouth feel, dark meat I guess unless they had oil in the water. Wonderful. Cheap too.
