i like to eat kosher and organic chickens but they are so expensive! i'd like a nice flavorful chicken for stockmaking, and i've heard that i could get a good one in chinatown for less. where?

freshness and quality are of paramount importance ... i usually don't like or buy mass-produced supermarket meat (especially chickens, blech). thanks!
