Im starting my chicken stock preparations, Via Jim Peterson, but wondered if chow hounds had any suggestions as to the type of chicken/cost to use.
Now Im intending to use B/J Wholesale Purdue Chicken legs and thighs at $0.89 per pound.
Note: round here, (southern Connecticut), butchers/grocery stores dont normally offer chicken backs.
Also Please note I know how to make stock. Please dont waste time with stock prep. directions.
This message is only related to the type/cost/availability of chicken for stock pot.
