I've decided to go ahead with chicken thighs cut in half...with the bone in and the skin on. This seems like the best compromise of taste and ease of eating.
My question is: the recipe calls for 4 whole chickens (10 lbs.). Would I still use 10 lbs. of chicken thighs? I'm guessing I'd use less since thighs have so much meat on them. Any thoughts?
FYI: The recipe serves 10-12.
