Chicken Liver Mousse: Opinions wanted

I am preparing my Feb. 14 menu and I was thinking about serving Chicken Liver Mousse for an amuse.

I surfed around the web and was astonished at the variety of preparations. Some have whipped cream, some don't. Some have wine, some don't. Some have liquor...etc.

So I'm eager to hear advice, pros and cons, passions, and so forth...
