Cheesemakers, how does buttermilk added to whole milk make cheese?

I have been making homemade riccota (well a cheese resembling riccota cause tecnically riccotas made with whey). Homemade riccota made with milk is actually similar to cottage cheese but without the tang.I first made it with vinegar to curdle milk then saw recipes with buttermilk. Initially I was afraid it would taste like cottage cheese but it didnt, it tasted like fresh riccota. But whats in the buttermilk that turned all that milk into cheese?
