I *just now* remembered that I have to make a cheesecake when I get home tonight. Normally I'll pull the cream cheese out in the morning before work so it's nice and soft when I get home, but not today.
So tell me, what's the best way to soften my creamcheese once I get home from work tonight? Can I gently microwave it for a few seconds, the way I would butter, or will that mess up the texture? Should I throw it right from the fridge into the mixer and let the paddle soften it up? Any help is appreciated!
