Can I make a cheese sauce ahead of time?

Here's the sauce:---basically cream that is reduced (with garlic & bay leaf) and then grated gouda & parmesan are stirred in. I want to make this about 6 hours ahead, transport and reheat. I don't have a thermos. Doable?
