I read avidly the recommendations for cheese shops here in the city below, and now have a tour of cheesiness to begin. One of the things I'll be looking for something that a recipe for stuffed tomatoes calls for: dry jack cheese. I've never heard of this or seen it at any cheese place. Anyone seen it and know where I can buy some?

Also -- does anyone know the most proper way to store it? How 'bout the proper way to store Stilton? I haven't bought one of those expenive special stilton keepers -- is that the only way?
