Having a dinner party this weekend and wanted to serve a cheese course accompanied by the ice cider that I brought back from a recent trip to Quebec. If you're unfamiliar with this beverage, it's a sweet apple-flavored dessert wine made from apples that are harvested after the first frost. I'm trying to come up with some good cheese pairings for this.
While in Quebec we had this paired with Oka, which is a nutty semi-soft cheese made by Trappist monks, based on port salut cheese. It was great, but I doubt that I can find it where I live (NYC). I was also considering aged gouda. I'm not sure whether any of the blue-veined cheeses would clash too much.
Any suggestions are welcome. Also, any fruit ideas beyond apples/grapes? Thanks.
