Charlie's new restaurant "C" will be opening late this year in Los Cabos, Mexico....

Charlie invited select media and a few customers to take part in a sampling of "C"s cuisine at a Launch Party reception last night at his Chicago restaurant.

Wow! They transformed the restaurant into a Mexican themed party complete with a wild signature drink that they would have never served at Trotters(they dont serve hard liquor) combined with classy tropical music, candles, Plasma Screen monitors with movies of the restaurant and resort and a VIP list to make this quite a night. And the food. Awesome.

Another cool touch is that they had Mexican Natives that worked at the resorts-complete in Mexican Native Garbs-welcome us at the entrance.

Here is what we had:

"C" Signature Cocktail - recipe to follow - AMAZING!

Napolean of Smoked Atlantic Salmon with Crispy Potato Tuiles, Pulped Avovado and Salsa Verde

Suzuki Bass Carpaccio with Radish-Jicama Salad, Cilantro and Local Oranges

Eggplant & Goat Cheese Terrine with Mache Sauce & Cumin Pumpkin Seed Vinaigrette

Shrimp and Pork Tortilla Soup with Spicy Caramelized Onions

Roasted Beef Tenderloin with Guajillo Sauce

Traditional Rice Puddingwith Cinnamon Cloves and Dried Fruits

Wine Pairings by Gallo of Sonoma

"C" Signature Cocktail

Yield 1 drink

3 oz Pineapple Juice
1 oz Silver Tequila
1/2 Yuzu Juice
1/2 oz Simple Syrup
4 Sprigs of Cilantro (including the stems)
Pinch of Salt
Slice of Orange (garnish)

Method
1. Combine all ingredients (except for orange slice) in a cocktail shaker with ice.
2. Vigorously shake for 10 seconds in order to extract flavor.
3. Strain contents of shaker into a highball glass filled with ice.
4. Garnish with a slice of orange and a straw.

I highly recommend getting these ingredients and trying this drink - it was awesome-the subtle cilantro flavor pushed this drink into a exciting blend of flavors for the mouth!
