Catering a wedding next summer

So I'm researching how to cater a wedding of 125 guests, they want lasagna garlic bread and salad, 1/3 of the lasagna will be vegetarian! The budget is $10/plate, wondering if the budget is reasonable, how to keep ingredients cost to not be over $400 and what to charge as a down payment
