how do you know when cast iron is seasoned?

I rubbed oil all over some new cast-iron pans and put them in the oven on a low temp for a couple of hours. They still look silvery and new. Am I supposed to wait until they blacken, or can I cook with them like this?

Also, any other cast-iron-related tips appreciated.
