Another cast iron question, please

I just purchased a Lodge cast iron grill. I seasoned it by putting a light film of cooking oil on it & placing it in a 350 oven for 1 hour, then turning off the oven & leaving it in the oven until the oven was cool. I used for the first time by grilling marinated boneless prok chops. I did not oil the grill or the pork. The pork chops were stuck to the grill when I first tried to turn them,leaving bits of pork on the grill. I cleaned the grill with hot water & a plastic cleaning pad. I was able to get the bits of pork from the grill, but could not remove patches of a dark substance between the grids. I dried the grill by placing it on the lit gas burners & heating until dry.

What did I do wrong? I am cooking on a Jenn-aire gas range & place the grill across 2 burners. Was my grill not hot enough? Should I oil the grill before grilling? Should I try to remove the dark substance between the grids with steel wool or is that the beginning of the seasoning of the grill?

Help would be greatly appreciated. Also, your what are your favorite things to cook on a cast iorn grill & griddle.
