For whatever reason, I keep coming across references to this French pastry lately, and I am thoroughly intrigued. They sound really unique: a hyper-caramelized outer crust with an almost custardy interior, sort of like a sweetened popover stretched to its textural extremes.
Does anyone know of a place around here where I can sample such a thing? I'd really like to try to make them, but I'd like to first taste an authentic version to give myself a benchmark, and to make sure I even like them.
Have car, will travel in search of authentic canneles.
