I just put the cake in the oven for a party this evening. I couldn't find instant espresso powder at my Safeway and didn't have time to go to another store, so bought instant coffee. I hope I don't live to regret it. The batter was rich and thick but it tasted decidedly of not-great coffee, and the good Scharffenberger cocoa powder I just paid 7 bucks for seems to have gotten lost. Perhaps baking will solve the problem? We shall see....and I shall report. I will have to make it again with the espresso powder!!
