When I was young and living at home, my mother, who is Italian used to make what she called a CrackCake. Tried to find recipes for this but have not been able to find anything. The Cake was chewy and had a lemon flavor. The reason she called it a
"Crack Cake" was because when it came out of the oven the top would be hard and would crack.
