How do you make sure that when you buy a dungeness crab from a Chinese market like Tin Tin and Ranch 99 that the crab has all its legs so it's whole and doesn't make a mess when you start boiling it? I always ask to see it before they put it in the bag but they just throw it in and hand it to me sealed up. What markets let you pick out your own?
