Business dinners in downtown Seattle

I will be spending some time in Seattle in the next few months and am looking for restaurants in the downtown area that would be condusive to a quiet evening of dinner/drinks/conversation. I'd like to find a few places in which I might be able to take clients, and where the food is good, the atmosphere quiet and the pace unrushed. I'll be on an expense account, so don't need inexpensive places but, on the other hand, can't be extreme either. Any advice would be appreciated. Thanks!
