Through a shopping error, I now have a lot more buckwheat flour than I know what to do with. Usually I save it for the occasional batch of sourdough buckwheat pancakes, or a side dish of buckwheat spaetzle, but that's where my ideas end.

I did a not-very-thorough Googling of buckwheat recipes, and mainly came across nasty sounding stuff like "Cheesey buckwheat with green chiles".

Any favorite things to do with buckwheat?
