How to make a broth with beef stock and veggies?

Hello all :)

I have a bad track record of putting things in a soup based on what I have and what I vaguely recall my mom doing, and it turning out meh. I don't have any particular cooking goal, just want to make a yummy warm broth for a snowy day. I have beef stock from bones (purchased from a good store, the stock is very gelatiny), celery, onions, leeks, tomatoes, carrots, parsley. Can I just put it all in? I was worried that perhaps you can't use both onions and leeks, that I have to choose one?

Would love to hear how you'd use these ingredients to have some warm soupy thing to drink :)
