I tried the brioche recipe from Artisan Bread in Five Minutes a Day. As you can probably guess from the title of this post, I was pretty disappointed with the results. I thought everything was fine, all the way until I tasted it. It didn't taste anything like brioche. It was missing the richness that I'm used to and the crumb was all wrong. It was too dense and almost cakey, not at all what I'm used to in a brioche. I am interested in hearing from people who have used this recipe. Did you get the same results that I am describing? Is this a bad brioche recipe/method? Or did I do something wrong? Is there another recipe that you can recommend which produces better results?
