Yesterday morning, I started some pork chops in a simple water-salt-sugar brine, with the intention of cooking it last night. Distracted by the season finale of Alias, I forgot. I got to thinking that 36 hours (what it will be by tonight) was probably too much brining time, so I poured off the brine and left the chops in the brining dish, covered, in the fridge.
Should I take any steps before cooking the chops? Any reason they could be irretrievable? Is there a better way to "pause" the process?
