I was so happy to be able to buy guanciale (delicious cured hog jowl) from Russo's, the Italian deli on 11th St. just w. of 1st Ave. Unfortunately, they stopped carrying it because nobody else was buying it. This is the traditional meat used in spaghetti alla carbonara and pasta all'Amatriciana, and it makes a world of difference to use the real thing. They've gotten me hooked and pancetta is a poor substitute. So if you're interested in cooking great Italian food at home, go to Russo's and request it! I regret not posting that it was available when they first started carrying it, but I hope we can convince them to bring it back!
