Hi -- I messed up the timing for my challah bread dough. It's doing it's first rise and should be done by 1:45. But I will need to leave the house at 1:30 and won't return until 2:45. Argh, completely wasn't thinking! So, what should I do? Punch it down early and let it rise again? Put it in the fridge to slow it down? I want it to be done by 5, which means it needs to be in the oven by about 4-4:15.
