I realise this is not really a recipe, but I just had the tastiest dinner in a very long time. My fishmonger had branzino, which is a Greek fish that looks a lot like snapper, except not red.
I had him fillet and scale it, then I let it sit with a bit of olive oil and garlic and salt on. Grilled it on my gas grill (at highest heat) for about three minutes a side along with some fennel bulb and then dressed it with lemon juice and fresh oregano, and served alongside some homemade babaghannoughj and a nice simple Greek (horiatiki) salad.
It was by far the best dinner I've had in weeks.
