I made this last night from an earlier post (linked below) and it was quite good. I was motivated since I had everything on hand. I did used shallots as the original recipe suggested and the wine I used was an Oregon pinot noir. The whole thing took less than 45 minutes and my 4 year old loved it so I can see these being a easy weekday addition too.
I also made the ricotta pie but was disappointed- it came out way too bland. Maybe my tarragon is old or I didn't use enough s&p. However, my husband loved it and thought it even better this AM for breakfast
