Hi y'all. Dinner time is fast approaching and I have not a clue as to what to fix. What I really want to do is flop on the couch and take a nap until it's time for bed. However, husband won't be happy with that.
A few days ago I bought a whole chicken, rightly assuming that it would be cheaper than buying chicken parts for fried chicken. The bad news: It weighed close to 6 lbs. I cut it up, followed a fantastic recipe for breading/wet dip/breading and put it in hot oil for 10 mins/side, then finished in the oven. It was amazingly fabulous, considering that I can't fry a chicken to save my life! We ate the wings, the drums, the thighs and the back. I am left with 1.5 really big breasts (I ate half of one for lunch recently).
I'm thinking that if I pull off the breading (and skin) I would be left with 1.5 beautifully cooked pieces of chicken. And there my imagination stops. Normally I can throw stuff together that's more than acceptable, but not today.
I have spinach, kohlrabi, sugar snap peas, green beans in the veggie keeper and I keep thinking I should be able to combine some or all of this stuff, but . . .
Any input would be appreciated. My hips and back hurt like a big dog, so quick would be really good.
