Bon Appétit 1992 Penne alla Vodka Recipe

Someone posted awhile back about a favorite Bon Appetit recipe they could not find. Here is the elusive Penne All Vodka recipe for those who are interested:

It came from The February 1992 Bon Appetit Magazine in the RSVP (favorite restaurant recipe) section.

Here it is:

Penne with Vodka and Tomato Cream Sauce
4 Servings

1 tbsp butter
1 tbsp Olive oil
1 small onion, chopped
1 28 oz can Italian Plum tomatoes, drained seeded and chopped
1 cup whipping cream
1/4 cup vodka
1/4 tsp dried crushed red pepper
1 lb penne pasta
Fresh grated Parmesan Cheese
Minced fresh chives (I omit this)

Melt butter with oil in heavy large saucepan over medium heat. Add onion and sauce until translucent (about 8 minutes). Add tomatoes and cook until almost no liquid remains in pan - stirring frequently. (about 25 minutes). Add cream, vodka and red peeper and boil until thickened to sauce consistency (about 2 minutes). Season to taste with salt and peeper.

Cook pasta in a large pot of boiling salted water until just tender but firm to the bite - stirring occasionally. Drain well and transfer to a large bowl. Bring sauce to a simmer and pour over pasta and toss well. Sprinkle with parmesan and/or chives and serve immediately.
