I can no longer get my favorite cake flour, as King Arthur has discontinued their bleached Queen Guinevere blend. Their new 'cake flour blend' is both way too expensive ($5 for a 2lb box? Are they kidding?) and doesn't do the job. So I'm trying to find a substitute. QG was a "high ratio cake flour, milled from soft wheat. protein: 7% ash: 0.35 treatment: bleached, enriched." So what would be a good substitute?
