Bitter Pad See Ew

I used this recipe but used zucchini noodles instead of real noodles, and smoked tofu instead of pork:

Ended up with a bitter taste that masked the delicious taste of the sauce :( I used Koon Chun thick soy sauce and Tamari instead of soy sauce bc I accidentally bought that at the health food store. Another thought is that maybe my crappy pan had something burned into it? Also, used canola oil.

Any ideas on how to avoid the bitter taste in the sauce next time? Thanks in advance!
