a big thank you to bushwick girl and everyone else who chimed in re slow cooked pork shoulder

i just heard my husband tell someone that it was about the best thing i'd ever made! worked like a charm. i had 2 pieces of bone-in pork shoulder that i placed together on a vrack. smeared with olive oil and then a mushed up mixture of fat sea salt, cracked pepper, fresh thyme and rosemary - into a 425 oven for 20 min. then i lowered it to 225 and 7 hours and 30 min. later they were spectacularly done. i loosely tented them while i heated up the gratin. i think i heard a few gasps of joy!

and it was so darned easy. i mean, i really sweated the thinking and the planning but the actual doing was so simple.
