I went to Beijing Noodle Number 9, at Caesars Palace, and had Xiao Long Bao (soup dumplings; in this case, pork). Soup dumplings are not served in soup; the soup is inside the dumplings.
The verdict: delicious! The wrappers were soft but firm, the pork filling actually tasted like something, and the broth was very nicely flavored. Six dumplings make a good shared appetizer, or a light lunch.
1. The server gave me a "do you have any idea what you're ordering" look.
2. YouTube is a good place to learn how to eat soup dumplings without (a) getting second degree burns, or (b) ending up with soup in your lap.
2. As the picture shows, the dumplings came in a metal steamer - with holes in the bottom. Any spills will be obvious. I was pleased that my table didn't end up looking like a swimming pool.
