why does bbq/broiled food taste better than boiled food?

i remember reading in "fast food nation" that the most pronounced flavors come from complex sugars like what you get when meat or food is exposed to high heat.

exactly how does that happen. why does a charred slice of mushroom taste better than a boiled one?

i had a high school student laugh at me saying that a protein (meat) can't turn into a sugar. so what gives?
