Baume, disappointing

estnet | Dec 1, 2010 04:19 AM

Friday lunch ended up feeling like a huge rip off. Servings were TINY and after spending $100 on food (before tax and tip) left very disappointed and a bit hungry (and Im a small eater)

I think there was an amuse bouche -but it was clearly not memorable. Bread was offered but was of an unexceptional quality. During a not busy time there were odd lapses - fois gras was served in about 6 dice sized pieces which somehow were seared on the outside but COLD and uncooked in the middle. I asked if it had been precooked as I couldn't figure out how this could be ( and it was not hot when served) but was assured it was made to order.

A kaboucha squash soup had a (?molecular) foam/sorbet which provided An interesting texture contrast but wasn't particularly tasty. Kabocha was used again as a base for the fish which was prepared sous vide - I really don't understand why. The preparation lacked the contrast of a nicely fried exterior and didn't seem very tasty.

Added course of truffle ($35 supplement) was described As a risotto. And it was- but of the molecular variety. A small serving (maybe 2 oz) of what was described as truffle infused tapocia spheres with truffle shaved on top just tasted bland.

Dessert was again of minuscule size and had small balls of ice cream that appeared to have been scooped and frozen beforehand lending them an icy quality (and these were about the size of half a teaspoon easy and I think there were 3 of them).

I was given some marshmallows as a parting gift.

The service was fine for the most part but well below comparable places esp. Since there were about as many servers as guests. The decor is okay but I was facing the windows which were covered with some sort of dark paper which was frayed at the edges which was quite tacky and suggested a lack of attention to detail which was quite evident in the food as well.

Servings were visually attractive, but none of the flavor combinations seemed exciting or memorable. I still can't understand the minuscule serving size. In fact I even ate some samples at Costco an hour later, something I could never do after a comparable meal at other fine dining restaurants.
