Basic Building Blocks for the Pastry Chef

These recipes are from the book “Chez Panisse Desserts”. They are the basic building blocks for the pastry chef, according to Lindsey Shere, the book’s author. She seems to say that if you want to teach yourself how to be a pastry chef or at least a good dessert cook, you should start with these recipes and use them as building blocks for the rest of the book. Sorry, I'm not going to actually show the recipes.

What is your reaction to this list? Frankly, some of these things I have never heard of. There were other things that I would have thought would be on the list, but I'm certainly no pastry chef.

I tried to group these things, if I mislabeled something espcially in the pastries section, it is my fault the author did not label them as such.
