Bar and Restaurant management, cook levels and qualificatios

Hi i have jsut been promoted to gm of a restaurant in Anchorage, AK. I hope I can be part of this northwest thing. My kitchen is a bit unorganized and I am implementing a cook levels 1 thru 5 and appropriat wage levels.
