We recently took the advise of jjd who posted sometime ago about her experience at Fuze. Fuze is a beautiful restaurant. Not something that you would expect to see in Banff. No river rock or logs. The only wood, we were told, was from recycled Saskatchewan grain elevators. The food was amazing. Very global cuisine. You can see east indian, french and asian influences in their food. They have a 3 course fixed menu right now which is a real bargain at $45. I guess it is the slower time in Banff. Try the salmon spring roll in a thai lemongrass soup appetizer. The night we were there there was a cooking class in their demonstration kitchen. Not sure if it is something open to the public or private bookings. Looked like fun. Oh, yeah, neat wine list. You may want to ask for help.
