banana pudding in africa

flinty | Mar 19, 2008 11:48 PM

I'm a Peace Corps Volunteer serving in Tanzania, and I'm desperate for an easy recipe for banana pudding. My resources are pretty limited: I can get flour, sugar, eggs, crappy vanilla flavoring, powdered milk and corn flour (to use as a thickener.) I cook over a charcoal stove, so I truly can't use any fancy techniques. Bananas are in abundance here right now, so I'd love to do something other than my usual banana bread (I can get baking powder, too.) Any suggestions?? I'm in town, away from my village, for the day, and will check internet again tomorrow. Big thanks from Tanzania!!
