Baking question: Quick question re making canele (cannele)

bythebay | Jun 15, 202009:00 PM

Hi I tried baking cannele for the first time recently in silicone molds using Jacques Pepin's recipe from Chez Jacques. I thought it turned out great and want to now proceed to trying them in copper molds. I would like to use the Pepin recipe again since I was very happy with it, but the recipe is specifically intended for silicone molds.

Question: Should I adjust anything, such as baking time or temperature as I swtich from silicone to copper molds?

The original recipe calls for baking for 30 mins at 300 then an additional 40 mins at 400. In case it's releveant, I also plan to use butter or an oil spray to coat the molds as I will not be able to use beeswax.

Thanks for any advice!
