So it looks like I'm having a bunch of people over next weekend and I'll be out of town for a couple of days before that. I can handle the rest of the meal, no problem, but I'm thinking I might make the pies ahead of time and freeze them. How do they bake from frozen? I'm thinking one peach, one blueberry. I use cornstarch for thickening the filling and generally do a crumble top. Any tips on baking so that they don't bake up with soggy bottoms?
P.s. no, I won't pre-cook the fillings.
