I have a 30" oven and I will be using a heavier aluminum baking sheet to sit it on.
Would you cook two crostatas at a time, using the two heavier aluminum baking sheets?
I think there will be too much steam.
I do have a convection oven.
If I cook one at a time, should I refrigerate the second one while the first one is baking?
Can you give me any advice?
