Why are my baked oysters bitter?

We just bought them at 99 Ranch in SoCal. Baked them for 450 deg for 10 min. Some were closed, some partially opened but we haven't had good success at them opening when baking (2nd attempt). Mainly the outer thin skin part that sticks to the shell was bitter.
