best no bake cookie-update

Somebody posted a while back on a chocolate crunch no bake cookie. Well, I made them this past weekend and they were a HUGE success. I tweaked it a little by not using Nestle chocolate (I boycott Nestle) and instead substituted Scharffenberger. I also made one batch with toasted slivered almonds and another with homemade mini marshmallows. Everyone raved and they disappeared in minutes. If you need a quick/easy cookie I highly recommend them! There are endless additions that would be tasty too.

16 oz milk chocolate
12 oz dark/bittersweet chocolate
4 oz unsweetened chocolate
10-12 cups corn flakes
2-3 cups toasted slivered almonds
Optional: 2-3 cups mini marshmallows

Melt chocolate in a large pan over low heat. Stir often to keep chocolate from scorching. When melted remove from heat and fold in flakes and almonds and/or marshmallows. Drop by scant teaspoonful on to lined baking sheets (silpat, waxed or parchment paper) and let cool 2-3 hours. Store, tightly sealed, in a cool place.
