I want to make Candy's southern cornbread in my new cast-iron pan this evening and I don't have time to go to the store to get bacon (darn!). I don't have any lard around either. Can I use butter? I know I can use oil, but it won't be as flavorful.
Maybe a mix of butter and oil so the butter won't burn?
I'll be mixing things up in about 90 minutes, so if anyone's out there, I'd sure appreciate your help.
(It's probably obvious I'm a Yankee who's never done cornbread Southern style before!!!)
